Ok. Planning out my next batch. an extract ESB or partial single-step infusion mash.

I have about a 1/2 lb of left over MaltoDex from a previous batch.

Do I:
A-do an infusion mash with the 1lb of carapils or

B-just get rid of the malto-dex in this batch since there are no other malted grains in the recipe

(Plan on mashing 2-3 lbs of english 2-row in my next brown ale in the near future. Just play with carapils in the brown ale?)

How will the Carapils do in an infusion mash, heard they can produce a cloudy finished product with a single-step infusion mash.

Grain bill:
7lbs Light DME
8oz MaltoDex. or 1 lb of carapils
1/2lb crystal malt 40lvb or 60lvb (thoughts?)
1 lb toasted 20lvb crystal (350° for 15 min)
Hop bill:
1oz willamette-60min
1/4oz nugget-60min
1 oz kent goldings-20min
1 oz fuggles-steep finish

Nottingham yeast (dry)

Irish moss
gypsum
