Time to Rack to.Secondary

I am making an Island Mist Kit (Green Apple Reisling). This the 8th day and there is still signs of active fermentation (airlock activity).

The OG was 1.059. The SG was 1.000 last night. The instructions tell me to rack to the secondary now.

Is it safe/advisable to rack now, or should I wait until fermentation is complete?
 
The initial transfer is supposed to be done before fermentation ceases completely. The rest of the fermentation will give off a little CO2 which will blanket the batch and help to protect from oxidation.
 
Those kits are usually ready to rack @ day 5.
Go ahead and rack it but be ready to move on to the next step in 5-7 more days.
Is this your 1st kit? If so the next step can be messy and I'd suggest you remove close to 1 full gallon before "Stirring Vigorously".

It's actually my second kit, but I will keep that tip in mind.
