Ascorbic acid is the vitamin C.
It won't hurt your brew.
You could use that juice by itself for fermentation. (with yeast/yeast nutrient of course)
You should be fine.

Yay! Thanks so mutch! At 1.60 a gal, i should go pick some more up and do apple mead..... Mwahahaha
 
^.... I was thinking maybe. I tend to have a foraging issue, where something free from the land must go into my brews. And advice on what i could add? Basil? Clover? Anything?
 
Cinnamon in cider is great.
Check out my drop down (recipes) for the cider i make,potent stuff.
 
I did the apfelwein with this juice, added clove and cinimon to the carboy, we shall see how this goes :)
