Hi all,
I just bottled my first bath of cider. It is really bitter. Several things my have gone wrong. Here's a brief history of my cider adventure.

I added regular table sugar when fermenting. Transfered it to glass jug after primary. At some point durring secondary air stop came loose. Don't know for how long. Replace it. At about 6 months I noticed a thin film of top of cider. There was still a fair amount of sludge on bottom (dead yeast?). One weed ago, I transfered cider to bucket leaving sludge on bottom. I just bottled it. I should have tasted it first. I tasted the last bit that wouldn't fit in a bottle. Very bitter and dry. The cider is about 10 months old. Is it still good. Can I dump it out and try sweeteners? Is there any way it is unsafe to drink? Sorry to run on about this, but I'm not sure what I've got here. Any help would be greatly appreciated.
