I'm making my first keezer using a 10cu ft igloo freezer. I got one of those STC-100 thermostats for $16 off amazon. Although the freezer name plate says it draws 1.3amps, it says it'll pull 20amps at startup. Most of the threads I've read say just run the freezer right off the relay inside that thermostat, I'd rather do it right and do it once.
I ordered a 120v 40amp solid state relay with a 120v AC input. This I wired to the STC-100 thermostat. The SSR I mounted to a commonly available heat sink which in turn is mounted to the metal rail beside the compressor with some self driller/self tapper screws.
I think the t-stat will fit in the place where the old dial t-stat went on the plastic panel. A little smooging with a dremel tool and I think it'll look pretty "factory".
