I used hops that where subtle and smooth for this beer and I aged in the keg for a weeks before I carbed and served it. It is so smooth complex and malty, just a perfect autumn beer. I know the grain bill is somewhat complex but they all play an important part in this beer. I hate to say that it was inspired by Fat Tire, but it kind of was. Consider it fat tire amplified.

C20 body
C40 base caramel flavors
C80 roastiness and deep caramel
Biscuit.....well biscuit and bready flavors
Munich ...deep maltiness

I made sure to bitter this ale fairly aggressively to balance all of this out without becoming an overtly hoppy ale. I would say it is perfect.
 
I can post a picture later tonight. Its a fantastic beer. I have made over 100 batches and this is top ten.
 
I wouldnt worry so much about having sonnet goldings at 30. You can sub willamette, fuggles, sterling etc to get the flavor you need there.
