Recently picked up some NZ Nelson Sauvin hops. I've never used them before and i've done some research on HBT and put together the following APA recipe.

The malt bill is one i've used a few times on another APA that I bitter with Magnum and then use Cascade and Centennials for flavour/ aroma.

Specifically I'm looking for comments on the hopping schedule and combination of Simcoe/Citra/ Nelson Sauvin.

just kegged a citra/simcoe/nelson IPA last week - still conditioning but coming along nicely.

i did 1oz additions each at 20min and after flameout and added 1oz each dry hop in the keg

really great combo but the nelson is def the dominate flavor profile - its an extremely strong hop

Did you have any bittering additions at the beginning of the boil?

I've heard the Nelson is really strong. That's why i'm not sure the Citra is the right combination. I find Citra pretty powerful too.

nope - total ibus were about 72 just from 20min additions

I don't think you'll pick up a ton of citra over the NS

i was going to suggest using magnum to bitter and add the simcoe later in the boil

i would brew with the simcoe/citra/NS combo again - i think they play well with the NS and help mellow some of the pungent flavor

This is my own personal preference, but I find the NS to be a little sweet and muddled if you don't pair them with something that gives off a sharp resiny citrus flavor/aroma. I think it goes well with Chinook and/or Simcoe.

I have avoided doing a Citra/NS combo because I find both to be really sweet and dominating.

This is sorta what I was thinking too. I'll consider Chinook.

Magnum for bittering is what I originally had. Nice, clean bitter to let the late hops shine through.

I'll keep tinkering...

i'm really loving this combo - one of my favorite beers I've brewed so far out of about 15

my only complaint is the aroma isn't as intense as I would have liked - wishing I would have done a reg dry hop before kegging and then added some more DH in the keg

OG 1.066
FG 1.005
IBU 72.4

8 lbs Pale Malt (2 Row) US (2.0 SRM) Grain 3 49.2 %
4 lbs Vienna Malt (3.5 SRM) Grain 4 24.6 %
2 lbs 8.0 oz Rye Malt (4.7 SRM) Grain 5 15.4 %
12.0 oz White Wheat Malt (2.4 SRM) Grain 6 4.6 %
1 lbs Extra Light Dry Extract (3.0 SRM) Dry Extract 18 6.2 % (added in primary due to poor efficiency)

That is great that you're happy with it. What was your hopping schedule?

I made some changes to the hops in my recipe and came up with this:

Amt Name Type # %/IBU
9 lbs Pale Malt (2 Row) US (2.0 SRM) Grain 2 81.8 %
1 lbs Munich Malt - 10L (10.0 SRM) Grain 3 9.1 %
8.0 oz Toasted Malt (27.0 SRM) Grain 5 4.5 %
8.0 oz Caramel/Crystal Malt - 30L (35.0 SRM) Grain 4 4.5 %

Total Grain Weight: 11 lbs Total Hops: 4.00 oz oz.

1.00 oz Nelson Sauvin [12.00 %] - Boil 15.0 min Hop 8 19.3 IBUs
1.00 tsp Irish Moss (Boil 10.0 mins) Fining 9 -

1.00 oz Nelson Sauvin [12.00 %] - Boil 0.0 min Hop 10 0.0 IBUs

sorry thought I had posted the hop schedule

1oz each NS 11.5%, Citra 12%, Simcoe 12.2% at 20min
1oz each NS 11.5%, Citra 12%, Simcoe 12.2% after flameout

1oz each NS 11.5%, Citra 12%, Simcoe 12.2% dry hop in keg

Wow, I wouldn't combine NS and Citra. Citra is very mangoey (sp) and NS literally tastes like purple grapes (Sauvignon). The two flavors are pretty contradictory.
