Issue I could see in it is the low sugar and high protein levels in quinoa.

You can try, how good it'll be is another question entirely. Messed around with different grains, some successful, some not. Let us know. My two cents, it will probably taste awful, but do try! cheap experiment. Also, word to the wise, the words "paleo diet" can ignite fires around here.
