I can't quite lager (basement isn't cool enough), and since its practically November, I wanted to whip up an ale yeast oktoberfest.
I did already look in the recipe database, only one was not a lager.
I am looking for other recipes that you've done but not posted. I'm after all grain, but can convert your PM to AG as needed.
mostly i wanna see grain bills, hops, and particularly what ale yeast will work best. I can hold mid 60's pretty easily.
I also have 4 jars of washed Wyeast Kolsch yeast, which seems clean and likes mid 60's....but I have no idea how appropriate it'd be for such a dark, malty beer.
