Hey Guys,

I just brewed up this recipe for my buddy's wedding reception. I have no idea how its going to turn out, but I based it off a previous IPA recipe that came out fantastic. What do you think?

that's gonna be a mouthful of beer! Really bitter, but lots of malt backbone too. I think it will be okay as long as that's your preferrence. I personally like darker IPA's, but there's a lot of folks who might be put off by such a bold beer. I guess it depends on your crowd ;)
 
Hey All,

Checking in on this recipe. I hit my OG and pitched the starter at 70. Its high, but it doesn't get much lower this time of year, plus I'm looking for some strong Belgian flavor. I wasn't too sure about my starter, but it took off in 24 hours against my doubts (I never noticed and krausen when I was propagating). The beer had a small krausen, about 4 inches and bubbled away. Signs of fermentation stopped after 4 days and I just measured the gravity today. Looks like I hit lower than expected at 1.015. I would have liked a bit more malt, but I'm hoping the crystal will keep some good body.

I add the oz of simcoe and I'm gonna let her sit for a bit.
 
You get a taste in before dry hopping?

Yes, but the flavor was quite young and wrought with imperfections. However, it is quite bitter and the chocolate malt adds a tiny bit of a chalky bite to the existing hop bite. I'd like it a bit more malty, but I also like a very malty IPA. I'll probably be tasting it again in a week to see how the yeast flavors mellow.
 
I'm in agreement. I love my hops, but when it comes to IPAs, I tend to shy away from the lighter, clean finish IPAs and lean more towards something with some malt backbone.
 
Just tasted this guy again and my lord what a few days has done for it. It is tasting fantastic. The chalky bitterness has calmed down and the sharp yeast flavors have subsided. The hop bitterness is also not too overwhelming. I think this one will be blooming into quite the nice beer.
