When to coat a cheese and how long to flavor it

I bought some cheese last year and haven't been able to find it again, since it's seasonal apparently, so I have decided to try and make it myself. However I am stuck on when to coat it and for how long. I have 2 batches of cheddar to try it on. One batch is 11 months old and one batch is 1 week old, I want to coat it with a malted barley mixture that has been soaking in whiskey. I was able to obtain some from our local craft distillery but I am not sure how long the coating should remain on the cheese to infuse any flavor in to it.
