I've aged beef several times before, but never longer than about 10 days. This one went 23 days. Its in the oven now. It lost 20.6% of its original weight.

I think I am going to leave my setup alone and age a deer roast starting tomorrow.

Yes, it is a mini-fridge. It has a temp controller knob in the back...generally between 35 and 39F is fine.

No kind of electronic humidity control, just a shallow dish of baking soda at the bottom(you can see it in the last picture) to absorb excess moisture.
