Taking suggestions on new brew

So far I only have one 6 gal carboy, my bottling bucket, and 5 single gallon carboys. I have now put my blueberry cider/apply wine in my bottling bucket in anticipation of bottling in the coming few days. Now that I have said that, I am taking suggestions on my next brew. I have one 1 gal jug open and will have two more open soon, plus I have the 6 gal open.

So, in one of the 1 gal I am going to do a pepper (jalapeno or habanero) based mead. That leaves two more small batches, anything crazy I should try out that you have had luck with? I don't mind making something in these that I might be the only one that enjoys.

Also, I need something great to fill the big 6 gallon with. I am going to do a big mead when I get a new carboy in a month or so, but I am thinking of a nice full bodied wine to start soon.
