Last night I bottled my first batch of beer. It spent 1.5 weeks in primary and 1 week in secondary. I tasted the sample I took for gravity readings and the beer seems to taste a little like wine. Is this just the taste of green beer? It is a Blonde kit I purchased. Og = 1.056, FG = 1.008, ABV = 6.4%.
 
What temperature did it ferment at? Over-warm temps can do odd things to flavors. Mainly though, it sounds green.
 
Fermented between 68 and 72. Used notty yeast. I know these temps are a little high for notty. Next batch gonna use a yeast that can handle higher temps. Any suggestions?
