I decided to attempt to make a hard iced tea. I started with 3 gallons of Arizona iced tea and a gallon of tea brewed on the stove. I mixed 4 pounds of corn sugar and 1 pound of honey into the boil and used champagne yeast. It has been fermenting for 3 weeks now and according to gravity reading is only half done. How long should fermentation take? And I just racked it into another car boy tonight.
 
It could tale another month or two to finish and then youmay have to age it for a while. I like the simple method for hard Iced tea a 5 gal Igloo Cooler fill with Ice add a 1/2 gal of vodka, 2 1/2 gal of Brewed iced tea and stirr. You can use Instant Ice tea Mix if you really want easy and you can drink it the same day
