Several times people post about a long fermentation time. I wanted to get some feelers out to find out what is the longest any of you all have ever waited for a fermentation? Has anyone ever had the brew never reach that point?

I have only brewed 2 batches my first was 24 hours and my second was about 72.

Longest time to ferment or longest time before fermentation begins?

For longest fermentation time, it'd be the lagers we just made, which makse sense because it was cold. Probably 5 days... For fermentation to start, probably 2 days... 2 nervewracking days.

Sometime between 30 and 40 hours. it started while I was at work so I can't say for sure.

In general.. time it took for fermentation to begin. I am guessing they will always average out between 1-3 days. My second batch also started while I was at work. I was pissed when I got home to see the tail end. Aside from the drinking, I think watching the fermentation is one of the best parts.

Maybe I should put a webcam in the closet? HA
