Thinking about brewing a white IPA using 50%wheat for the grain bill and citra/Amarillo as finishing hops.
Any opinions on what the best Belgian strain might be for this?

I've been trying to make a perfect white IPA for months. I go back and forth between adding spices or not but I always use a Belgian wit yeast. I like using any of the typical wit yeasts (WLP400 / WY3944) but more recently I've also added Conan for its higher attenuation, silky mouthfeel, and peach flavor

I just made a WHITE IPA. i used WLP575 Belgian Style Ale Yeast Blend... my recipe went something like this. (lost my beersmith recipe when phone died)

7 lb (2.95 kg) | Belgian 2-row Pilsner malt
3 lb (1 kg) | wheat malt
1 lb (652 g) | wheat flakes
.5 lb | flaked oats
.25 lb Rice Hulls
0.75 oz (21 g) | Bravo or Nugget pellets, 15% a.a. (60 min)
.5 oz | Citra pellets (knockout)(30)
0.12 oz (3 g) | fresh ground coriander (5 min)
0.34 oz (10 g) | fresh ground bitter orange peel (5 min)
1.0 oz (28 g) | Citra pellets (knockout)
1.0 oz (28 g) | Centennial pellets (knockout)
0.5 oz (14 g) | Cascade pellets (knockout)

kegged and carbed at 10psi for ~1 week. real nice beer..

I just tapped the white IPA i referred to above and its definitely the best one ive made yet. Taste authentically witbier like with a kick of hops. I wanted to feature this new German Hop called Hallertau Blanc. Its like a cleaner, more floral Nelson Sauvin. Gooseberry character is prominent. I don't think ~1.5 oz of hops is anywhere near enough to make a White IPA. I'd use 1.5oz in a regular wit maybe.

Here's the grain bill:\
5lb pilsner
3lb wheat
2lb flaked wheat
8oz aromatic
12 oz cane sugar

And here's the hops:
@60min: 1 oz magnum
@10: 2 oz hallertau blanc / 1 oz amarillo
@0: 4 oz hallertau blanc / 1.5 oz amarillo
*hopstand for 45min or so*
@dry: 2 oz hallertau blanc

1oz coriander 1oz orange peels @5min

I co-pitched Wyeast Forbidden fruit and Conan

I love Belgian Ardennes strain. It has the perfect "Belgian yeast character." Bubblegum, cotton candy, tart. 3726 wyeast I believe
