Just curious, I sort of improved an apfelwein recipe 5 weeks ago Saturday. I used edworts recipe but subbed in some brown sugar, touch of molasses, and also used nottingham hoping for a sweeter, although lower abv, finish.

The airlock went crazy for the first few weeks and I noticed yesterday that there is still some activity after 5 weeks. Have you folks ever seen activity for that long?

I need to start taking readings to see if it's finished but I usually wait until at-least a week or so after airlock bubbles stop before I take readings.

With Apfelwein, you usually get some degassing of CO2 from solution after fermentation activity has ceased. Take the gravity readings and trust those.
