I don't have an glass flask to use so I pitched a 1.5 liter yeast starter into a 1 gallon plastic bucket and covered it with clean saran wrap. I realize this isn't ideal and I've read that additional headspace can be a problem. Will my starter be ok?

Yup, should be just fine.

For a starter, you WANT oxygen to help the yeast grow, so headspace isn't a concern.

Not much different than an "open fernentation"... (all that extra space) so Ya I think it will be fine...
