At the last Real Ale event I went to, Cambridge Brew pub had a cask conditioned Vienna Gold Altbier that was supposedly made like a Vienna Lager but with a Kolsch yeast. It was 100% Vienna malt, and it was unbelievably good.

So, I'd say 100 :D
 
Yeah, I made a Vienna that was all Vienna malt and it tasted great and the color was spot on.

for 10 Gallons (40 Liters). Measuremnets are in Metric:

I didn't have ebough Saaz so I used some Northern brew for bittering as well as the saaz, but you could replace the saaz for bittering with any hop as long as you get about 30 IBU from the 60 min addition.

I mashed as follows:

130F - 15
148 - 30
158 - 15+
Mashout 170
Sparge 170
 
Vienna is one of the malts that produces enough enzymes to convert itself, so you could go 100%. It can't convert other malts, though.
 
Vienna malt has an alpha amylase in the range of 40 and a DP in the range of 130, just slightly lower than base malt. Thus, you can use 100% Vienna if you wish. Color is in the range of 3 to 5 .
