maple sap as brew water?

The maple syrup making season is coming to an end. i had a crazy idea. i get about 1 gallon of sap (mostly water) out of each of my taps per day when it is flowing good. my idea was to use this sap (water) to brew a batch. i just don't know what the properties of the sap are. i know the sugar content could be around 2%. i would have to check the ph. has anyone done this or heard of doing this. it could be a good way to ruin a batch of beer, i don't know. any ideas or thoughts on this
 
thanks for the link. i will have to try it next year. i will make a stout using 10 gallons of sap, boiled down to five gallons for brew water.
