Hello,

I brewed some a few years ago using extract only. Now I live in Katy, and need to learn how to deal with the warmer temperatures down here. I also want to get away from extract brewing So I am excited about finding this board.

I grew up on the other side of Houston (East). Have you been to Defalco's Homebrew Supply? they are over on Stella Link. I don't know if there are any LHBS closer to you, but if you go to Defalco's, talk to Scott Birdwell (owner) or a guy named Landry. Both are very knowledgeable. The other people might be as well, but I've delt with those guys a lot.
As far as the heat, I'm in the hill country now, so I'm still dealing with it. I would check out "No Chill Brewing". I do a hybrid method that has worked out very well for me so far. Good Luck - Dwain
