not sure if this is the right area to post this but i have an extract kit for b.p.a. and want to "hop it up" a bunch and im looking for suggestions. i have lots of extra cascade,willamette,and simcoe hops at my disposal. any and all help is appreciated.:mug: b.t.w. this is a 5 gal. batch
 
Well it depends what you want. Willamette would be the most appropriate for a “classic” Belgian profile since they use a good deal of English hops. The bolder American hops are used from time to time and can mesh well with a Belgian yeast, but it is more hit or miss to my tastes. Good luck.
 
I have a Saison on tap right now that I loaded with just Amarillo hops. It's fantastic!! I think Simcoe could work equally well.
