Way too much stuff. No need for the chocolate, special b, melanoidin and vienna. Just munich and pilsner for the base plus layer some different caramunichs on top. You can add a little aromatic for more maltiness and some carafa if it isn't dark enough.
 
Agreed. One of the best doppelbocks I made was 100% munich. Mostly munich and pilsner will do it, with a little bit of a dark malt for color/roast is the classic recipe according to Ray Daniels' book. Perle should work well for a noble type bittering hop too.
 
Oh well. The grains are mixed together now. What category would it fit under? Kind of like a schwarzbier but the gravity is too high. It fits into the guidelines of a dopplebock by the numbers, but some of the grains (chocolate malt, special b) are out of character. Strong dark lager is what I'll call it I guess
