Is there a such thing as too much? I want to make a 3 gal test batch but only have 6.5 gal fermenters. Can I use one of those or should I invest in a small carboy?
 
You'll be fine. There will be a C02 blanket on the top of the beer to protect of oxygen.

I've done this in the past with success. I wouldn't worry.
