8# Klages
3# Munich
1# Brown
.75# Crystal
.75# Chocolate
.5# lb Wheat
.25# Cara-pils
.25# Caristan
.25# flaked barley

14.25 lbs total

Adjuncts:
8 oz brown sugar last 30 min
.3 oz Lyle's Black Treacle last 30 min

Hops:
.5 oz Perle leaf (7aa) 60 min
.5 oz Kent Kent Golding plug (5.2aa) 45 min
.25 oz Hallertauer leaf (4.1aa) 30 min
.5 oz Kent Golding plug (5.2aa) 15 min

Mash Plan:
Harden water with salts as appropriate (1 tsp gypsum, .25 tsp
salt) mashing into 4.25 gallons @ 132 (moderate thick mash
favoring dextrines, compensate with long sugar mash). Stabilize
at 124 and hold 30 minutes. Bottom heat to 144 and hold 20
minutes. Bottom heat to 155 and hold 60 minutes. Sparge to
collect 6.5 gallons. Check gravity pre-boil and boil down to
whatever hits 1.075 to allow for dilution with starter. Spin,
filter and pitch.

Fermentation:
Prepare 2 quart starter of .5 cup DME and .5 tsp Yeast food.
Pitch puffed Wyeast pack and time it for full krausen at
pitching.

Ferment warm @ 75 in a blowoff primary. Prepare for VIOLENT
blowoff! Rack after a week and finish at 65 degrees for a week.
Bottle with .75 cup dextrose to prime and condition for a month.
Original Gravity - 1.075. Racking Gravity - 1.022. Terminal
Gravity - 1.018
