I'm going to try to make this question as short as possible, but there are a lot of factors. I brewed a batch on Feb. 13. It was an English style ale with willamette, east kent, and styrian goldings and I used S-04 (for the first time). I thermometer on the fermentor read about 66-68 the whole time. Then I kegged it, in a keg that I was using for the 1st time--just came in the mail and I rinsed it and sanitized it before use. Ok, so now the beer is carbonated, but just not tasting as I would expect. How can I figure out if the taste is from:
1. estery flavor from the s-04, a yeast I have never used so don;t have a reference for
2. a sanitation/infection issue with the new keg--would there be a visible sign of this in the keg? also it tasted great when sampled from the fermentor at transfer
3. maybe just needs more time, it has been in the keg since march 5.
