Ok, so I have a 10 gallon batch of hefeweizen mashing. I went to my yeast stash, and i thought i had 2, 11g pouches of Danstar Munich, but found only 1. i do have a good supply of Danstar Nottingham. Should I mix them or go all Nottingham ?? The Munich is supposed to be better for a wheat beer.
 
The yeast is what makes a hefeweizen a hefeweizen.

If you use notty you will just have an american wheat of some sort.
 
well I used both. It was an all grain Blood Orange Hefeweizen. most hefe yeasts have a bananna flavor. Dont need it with the orange. Guess we will see.
