One cold, wintery day several years ago, we hunted far and wide for a chili recipe that involved beer and other interesting ingredients not normally found on a recipe ingredient list. The search led us to the grandest chili recipe of them all.
Chili Recipe
I make this recipe all the time... Over the years, I've changed it to my tastes, but it's largely the same. People who've had it beg me to make it.
I've made it with a variety of beers, but tops so far is Brooklyn Brewery Black Chocolate Stout. I don't eat beef, so I make it with ground chicken and boneless, skinless chicken breast strips. Have also made it with bison. It's awesome either way.
2 tbsp canola oil
2 red onions, chopped
3 cloves garlic, minced
1 lb ground turkey or ground chicken
1 lb boneless, skinless chicken breast
8 oz Hunt's ketchup
12 oz beer (stout or brown ale work very well)
1 cup brewed coffee (strong... preferably Starbucks Sumatra)
12 oz tomato paste
14 oz chicken broth
1/2 cup packed dark brown sugar
3 1/2 tbsp chili powder
1 tbsp cumin seeds (whole, not ground)
1 tbsp Ghirardelli unsweetened cocoa powder
1 tsp dried oregano
1 tsp ground cayenne pepper
1 tsp ground coriander
1 tsp sea salt
2 (15 oz) cans dark red kidney beans, undrained
2 (15 oz) cans black beans, undrained
4 fresh hot chile peppers, seeded and minced
Cook meat, onions, and garlic together until meat is done. Throw
everything together in a big stock pot. Simmer for 2 hours.
Refrigerate overnight. Eat.
