what's the shelf life of unpasteurized hard cider vs pasteurized? I am making some now and I believe it will be 9 or 10%. Will it go bad if I rack it and keep it in a car boy (filled to the top) for a year or two? should I pasteurize it after I ferment it? I'm thinking heat it to 140f for 30 min.

You don't need to pasteurize. As long as you're careful to not oxidize the cider (pasteurized or not) it'll "keep" just fine. I have bottles of cider, mead and wine that are years old.

That's good to know, thanks. I couldn't think of any reason for it to go bad, but after reading other peoples post saying how unpasteurized would only last 8 months, I was worried especially since im picking and pressing my own apples with a goal of 55 gallons.
