Recipe Specifications

Batch Size (fermenter): 5.50 gal
Bottling Volume: 5.00 gal
Estimated OG: 1.053 SG
Estimated Color: 8.5 SRM
Estimated IBU: 38.7 IBUs
Boil Time: 60 Minutes

Ingredients:
------------
Amt Name
1 lbs Caramel/Crystal Malt - 60L - Steep at 150F for 30 minutes.
2 lbs 8.0 oz Extra Light Dry Extract - Boil for 60 minutes. (always make sure to turn off your heat when mixing in extract)
1.25 oz Cascade [5.50 %] - Boil 60.0 min
0.75 oz Cascade [5.50 %] - Boil 20.0 min
4 lbs Extra Light Dry Extract Boil for 15 min
0.50 oz Cascade [5.50 %] - Boil 5.0 min
0.50 oz Cascade [5.50 %] - Boil 0.0 min
1.0 pkg Safale American (DCL/Fermentis #US-05) Yeast - Cool wort to at least 75F (68-70 better) before pitching yeast.
1.00 oz Cascade [5.50 %] - Dry Hop 7.0 Days

I followed it as close to the letter as I could, except at the later hop additions (20, 5 & 0 min boils) I used a mix of Cascade and Bramley Cross hops (after a bit of reading round, it was an informed decision for my taste buds). Also, I used a mix of Extra Light and Light Malt extract - again for my taste buds. [edit: I also steeped the crystal malt for a bit less time, as I prefer a slightly less caramel taste}

It's still in the brew barrel and has been in for 9 days. Primary has mostly finished, but I'll leave it for another week before bottling.

I couldn't resist a quick spoonful, and it tastes bloody lovely, like Real Ale, with none of the homebrew taste I moaned about in a former post. There's been another change from previous brews, in that I've brewed at a much lower temp. I presume this has helped, but nowhere near as much as a decent recipe.

No more kits for me...
