Well, just bottled this sucker today. I call it Amsterdam Wit because I picked up the ingredients at a HBS in Amsterdam. I made it not knowing what unmalted white wheat is so its not a true wit, but DAMN, the sample tasted excellent and was a very whitish/golden pale color:

6lbs Belgian Wheat Malt
4lbs Belgian Pale Malt
2lbs Munich

60min hallertauer 1oz
30min hallertauer 1oz

WYeast Belgian Wit

Ambient room temp was 74 for the majority of the fermentation, which scared me. The fermentation was so vigorous that for about 2 hours it got up to 78F... I put it in a cold bathtub and it got back down to 71-72 and stayed there until bottling time. Even with the high temp it reached it tastes excellent. The estery tone is very mild and something I like in my wheat beers.

Can't wait to start on this sucker!!!!
