I am making a Kolsch. It is fermenting nicely at 68f. I plan to then "lager" it in the fridge at about 48f. Should this "lagering" phase be done on the trub in the original fermentor or rack to a secondary and lager in that? If you guys answer this then I will send you some of the beer.... ok not really.

Definitely rack to a secondary before lagering. It will make a much clearer, cleaner tasting beer. Sitting on trub for too long can cause issues.

I expect beer to be at my doorstep when I get home.

definitely rack off of trub prior to lagering. I would think you'd want to lager it closer to 34F (typical lager temp). That's what I'm currently doing with my kolsch (4 weeks in the lagering fridge, almost ready to keg). 48F is closer to the fermentation temp for lagers than the lagering phase.
