I'm still a 5 galloner, but I would say you're going to want one mash tun. This will alleviate a) the possibility of having more of one type of grain in mash tun A vs mash tun B. Not sure if this could affect your conversion or not.... And b) the possibility that mash tun A is mashing at a different temp than mash tun B.
I'm sure it's possible to do, but I wouldn't recommend it personally. Also, that's twice the amount of equipment to clean... which sounds not fun.
