congrats on the new pot. It will serve you well. I have the 62 quart version and love it. No need to drill and add a spigot. Just use an auto siphon to transfer once you have chilled.
Saved some of my previous batch for St patty's day. The remainder for my B-day,which finally fell on Easter again after some 53 years!! Gunna pit bbq a serloin tip roast. Maybe a leg of lamb with that & whole taters & some ash wood. So happy birthday in advance!
