I recently tried to attempt making a orange Creamcicle ale. I used,
Primary;
1/2 lbs crystal 60
1/2 lbs crystal 20
3.3lbs sterling amber
3.3 lbs Pilsen light
1 lbs dextrose
1 oz cascade 60 min
.5 oz Citra 60 min
1 oz Citra 10 min
.5 oz cascade 10 min
1 tsp coriander 10 min
1/2 tsp fennel 10 min
1/2 tsp vanilla extract 10 min
Zest of 3 oranges 10 min (14 days in primary)
SECONDARY
1/2 oz cascade
1/2 oz Citra
4 lbs of frozen orange soaked in vodka
2 vanilla beans after fermentation stopped according to hydrometer, than added 1 more to taste.
Before I bottled tasted delicious, bold up front chased with mild orange Creamcicle chase but after bottling it had a charcoal or almost a burn flavor and really terrible smell. Anybody have any suggestions. Criticism welcomed i created this recipe and changed about a dozen times a few were close but missing something,
