I am working on my second recipe formulation for my 3rd brew overall (my first recipe that I did on my own is in primary right now). I would like to a hoppy summer wheat similar to Gumballhead or Southern Tier's Hop Sun, although I don't want to do actual clones of either of them. What do you think of the following? I am thinking about adding another late hop addition, maybe around the 5 min mark. Do you think that would be beneficial? Also, the IBUs seem a bit high; do you think that maybe I should cut out the 20 min Cluster addition? Removing the Cluster would get the IBUs down to 52.

malt & fermentables

75% 6 0 Wheat Dry Extract
13% 1 0 Wheat, Torrified
13% 1 0 American Two-row Pale info

hops

boil 60 mins 1.0 Nugget pellet 12.5
boil 20 mins 1.0 Cluster pellet 7.5
boil 15 mins 1.0 Amarillo pellet 8.2
boil 15 mins 1.0 Centennial pellet 10.0
boil 1 min 1.0 Centennial pellet 10.0
boil 1 min 1.0 Cluster pellet 7.5
boil 1 min 1.0 Amarillo pellet 8.2
dry hop 7 days 1.0 Citra pellet 11.1
dry hop 7 days 1.0 Amarillo pellet 8.2

Safale US-05 Dry Yeast

OG = 1.064 (1.057 to 1.066)

FG = 1.017 (1.015 to 1.018)

SRM = 7

IBU = 62.7

ABV = 6.3%

Thanks for your help.

Looks tasty to me, although I'll agree that you shouldm probably cut down the bitterness unless you want a "Wheat IPA." Both Hop Sun and Gumballhead are lower gravity/alcohol, which I think is the way to go for a refreshing summer drinker, but that is up to you. Otherwise it looks fine assuming you are going to mash the wheat/pale. Good luck.

Looks good, Love to try some!

The only comment I have is to perhaps simplify the hops a bit, but that isn't a must at all. Maybe something like Columbus at 60 and 40 to get your bitterness, then Amarillo for flavor and Aroma all in the last 5 minutes. Another god dry hop type is Crystal.

Also, you are using S-05, but one thing you may or may not want to think of is using a Bavarian Yeast and fermenting on the cool side (upper 50's) to get a crisp clover presence versus banana. This really brings out the profile you are going for in my mind. Granted, you will not get this with S-05, but it might be a great way to round out your beer.

Cheers!
