I have a dubbel that has been in the fridge and on gas for about a month now. I have been drinking some every now and then. Sometimes I think they are great, but sometimes it feels like its not ready. It was in primary for seven weeks so its been nearly three months since brew day. My question is: Can I take this keg out of the fridge and let is sit until the fall when darker beer is better? Will the fact that it has been cooled and drank out of affect its conditioning when put back at 70 degree temps? It is just taking up room in my fridge and I would love to recplace it with a Blonde that just finished...

OK...I think this sould be moved to General Techniques instead of Beginners. I will give it a shot over there!
