racking after primary fermentation

So when primary fermentation is done and im ready to rack should I rack into a smaller container? Im only making one gallon of mead.

also how often should i rack in secondary fermentation?

the more info given is much appreciated because i am new to this stuff! thanks
 
as big as needed. as long as it filled to reduce area exposed to the air. if you have any left over store it separately as you often need some to refill the secondary after racking.

racking, as much as needed and as little as possible. each time you rack you run the risk of adding air into it.
