Anyone know of a way to alter a Johnson Analog controller to maintain heat not cold? I have a friend that is smoking meat at very low temps in some large box like contraption with a heat source. I'm not using my analog controller and thought it simple to control heat...but opening it up no obvious changes to be made.
 
I believe the Johnson Analog can only be set between 30F and 80F so if cold smoking is in those ranges, then it can be used as is. Just hook it to the heat source and set it to the smoking temp. It will turn the heat source off when temp is above set point (give or take a few degrees) and turn in back on when it falls below the set point.
