So I decided to try something that's kind of historic (pre-prohibition style) and not brewed much anymore. I really want to do this as a Lager, but will not be able to for a long time. Would an Ale yeast like Safale US-05 work instead? Would something else be better? I want it to be as close to style as possible. How different would it be as an Ale using a drier, crisper, cleaner Ale yeast? Thanks.
