How do you age your bottled home brews? Do you keep them at room temps, in the cellar, or should they be put into the fridge?
I currently have 6 cases of nicley carbed beer and apfelwein in my closet at a stable 70 degrees.
 
70 is great while they get carbed up. After that they will last longer if kept cooler.
 
SWMBO isn't too keen on filling the fridge with my brews. I'm allowed about a 12 pack. But the beers don't last in there too long.:) Are the beers sitting at room temp maturing?
