If I have brewed a beer before and I know what the final gravity will be, how far above final gravity will give me say 2.5 volumes of carbonation in a 12 ounce bottle?

I would like to bottle without adding additional sugars.

Another method would be to save some unfermented wort and use that as bottling sugar.

Anyone know what I would search for to find this kind of information?

search for krausening.

its a lot safer than trying to bottle beer that hasn't finished fermenting. Just because your estimated FG is 1.010 doesn't mean it'll stop there, especially if you brew all grain, and double especially if you don't have the same efficiency 100% of the time.

+1, that's a dangerous game. Looking at beersmith it is around 0.002. That is waaaaay to close to call. 4 ounces of tasteless dextrose is not worth worrying about.
