I've been absent from HBT for a while, engineering school keeps me busy. My interest (or obsession) with photography does too (I recently finished building a darkroom because I shoot film more than digital lately).
Anyway, I made a MLT with a stainless false bottom a few weeks ago and tried my hand at all-grain brewing. I missed my target gravity by a huge margin, and have ended up with a 4% "pale ale." It still has decent flavor, the hop character survived, and there's still character on the malt side as well.
Per the advice of many I've just relaxed, not worried, and enjoyed a homebrew - but I intend to get the all grain process down to where I'm as confident in my ability to nail my gravity and style as I am with the extract process.
