How to drink a young mead?

Poor planing on my part, I forgot to start a mead to drink on my birthday on Saturday. I have some larger batches that have high abv and started then last November but I rather not break them down yet as they are not ready.

I have two options, a half gallon of blueberry cyser with clover honey started December 2011 and a gallon of wildflower started may 4th 2012. I rather drink the wildflower. Either one will need to be back sweetened to be enjoyable.

Should I just rack and slowly add honey to cover the hot taste?

i'd just let them age and drink something else for your birthday....Have them next year!

Agreed. Buy your favorite commercial mead. No need to rush yours.

Knucklehead & TyTanium are right, drink something else & save that mead for next year.
