Poor planing on my part, I forgot to start a mead to drink on my birthday on Saturday. I have some larger batches that have high abv and started then last November but I rather not break them down yet as they are not ready.
I have two options, a half gallon of blueberry cyser with clover honey started December 2011 and a gallon of wildflower started may 4th 2012. I rather drink the wildflower. Either one will need to be back sweetened to be enjoyable.
Should I just rack and slowly add honey to cover the hot taste?
