so i made jamils witbier, i swapped the orange zest with meyer lemon zest because I had some home grown on hand. This was a mistake...

The beer is off-puttingly lemon.

I know this will never be a great beer, but it breaks my heart to dump it.

Any ideas on salvaging? Fruit etc.?

Well you were close. Meyer lemons are actually a cross somewhere between a true lemon and a mandarin or true orange.

Is it acidic or just lemony? You may be able to drop the acidity of out suspension using potassium bicarbonate but I've only really attempted that with wines.

You could also age it to see if it calms down some, too.

Good luck!

rather than risk making it worse, bottle it and keep it out of sight for a month or two. if it was my beer i would just dump it and brew something else, it won't be the last time this happens.
