Once you have milled your grains, how long can you wait before you brew? Is a week too long, even if I keep it very dry? I usually brew the day I mill, but it may not work out this time.

Many people buy there grain milled from online stores and brew the following weekend. I don't think a week is too long. Dont put it in the fridge unless you are sure of how airtight the container is. Refrigerators are condensation traps. At room temp in a paper bag I have used it 3 weeks later without any ill effects.
 
Shoot, I've used mine a month after buying it milled with no problem. I got 70-75% eff. too which is normal for me. I have heard you cant go much after a month though...
