Enough or more than enough yeast?

So I have a Kolsch right now fermenting in the basement. I was thinking of brewing another batch with the same recipe. If I put another batch of wort on the yeast cake in the carboy and then pitch the Wyeast Kolsch, is that too much yeast? Will this overflow while fermenting? Should I not even use more Wyeast Kolsch?

I've heard that pitching on the whole cake is overpitching. What's the deal? Is there a ballpark figure for the number of cells after a healthy ferment?
