Explain sulfur production in relation to yeasts

Two of the yeasts that are recommended in the recipe that I'm going to use to make my first hef talk about sulfur production. . .could someone explain what this means to me?

You will get a rotten egg smell during fermentation. I also see this happening with lager yeasts.

The smell does not generally carry over into the finished beer though.
