Hey All,
Was planning on trying my hand at an English Mild and wanted a little input about my recipe.
Ill try to hit all the important points.
Extract
5 gallon
LME 4.4#
Chocolate 0.33#
C 60 1.25#
Fuggles(whole) .5 oz 6% AA @ 60 mins
Fuggles(whole) .5 oz 6% AA @ 25 mins
Wyeast 1968 Pitch @ 65F let rise over 7 days to 70F
Steep grain @ 160F for 15 minutes
Boil 60 minutes adding LME in the last 30 minutes
Cool to 65f and pitch. T-shirt, fan, and ice method letting rise to 70 at end of fermentation and giving time for a diacetyl rest (per wyeast recommendation).
I plan to let age in carboy until diacetyl rest is complete then into keg to cold condition and clarify.
I'm hoping this can be a quick beer and be ready in 14 days.
